White Balsamic Roasted Potatoes
- 1 lb baby potatoes or 2 medium potatoes cut into 1" chunks
- 1 Tbsp OLiV Arbequino or Italian Herb Extra Virgin Olive Oil
- 1 Tbsp White or White Lemon Balsamic Vinegar
- 1 tsp dried Italian seasoning
Preheat the oven to 400F. Slice the baby potatoes in half or if using medium potatoes cut into 1" chunks. Put remaining ingredients in a medium bowl & mix well. Add potatoes and toss, coating throughly. Arrange potatoes in a single layer on a baking sheet. Roast for about 30 minutes, until brown & crispy, turning once half way through cooking. Serve hot.
