Watermelon Feta Salad
- 5 cups watermelon (cut in large cubes or in circles with a melon baller)
- 1 cup arugula
- 4 ounces feta cheese
- 4 or 5 mint leaves, chopped
- 1 Tbsp OLiV Blood Orange Extra Virgin Olive Oil
- 2 tsp OLiV White Lime Balsamic
Using a melon baller, cut the melon into balls (or cut into 1/2" chunks).
Layer the arugula in a large shallow serving bowl and scatter the watermelon on top. Scatter the feta on top of the watermelon. Drizzle with Blood Orange Oil and Lime Balsamic. Top with chopped fresh mint.
