Roasted Garlic Hummus
- 6 Tbsp & 2 Tbsp OLiV Roasted Garlic Extra Virgin Olive Oil
- 1 - 540 ml can chickpeas
- 1/3 cup liquid from can of chickpeas
- 3 Tbsp lemon juice
- 1/2 tsp salt
- Paprika & parsley for garnish
Drain chickpeas, reserving liquid. Combine 6 Tbsp OLiV Roasted Garlic EVOO, chickpeas, lemon juice and salt in a blender or food processor. Add 1/4 cup liquid reserved from can of chickpeas. Blend for 3 - 5 minutes on Low until smooth.
Spread into a shallow bowl. Create a well in the centre of the hummus. Pour the remain 2 Tbsp Oil into the well. Sprinkle with paprika & chopped parsley.
