Twice Baked Sweet Potatoes
- 4 Large sweet potatoes
- 6 Bacon strips
- 1 Cup sour cream
- 3 Green onions, chopped
- 1 1/2 cups shredded cheddar cheese
- 3 tbsp OLiV Maple Balsamic
- 3 tbsp OLiV Bacon Extra Virgin Olive Oil
- Salt & Pepper to Taste
Preheat the grill on high, wrap each potato in foil & place on grill to bake. Close lid & bake for 30 - 40 minutes until fork tender. Meanwhile cook bacon until crisp, drain on paper towel & chop finely. Cut cooked potatoes lengthwise. Scoop out the flesh & transfer to a medium bowl.
Lightly mash to potato flesh with OLiV Bacon Olive Oil, sour cream, half of the green onions, half the bacon and 1 cup of cheese. Season with salt & pepper to taste. Mix well. Fill hollowed potatoes with mixture & sprinkle the remaining cheese, bacon & green onions on each sweet potato. Drizzle with OLiV Maple Balsamic.
Place back on a medium heat grill, directly on the grate & cook for 15 - 20 minutes until cooked through and cheese has melted.
