- 6 - 7 ripe Roma tomatoes diced
- 3 cloves garlic minced
- 1/2 small red onion minced
- 1 tbsp OLiV Basil Extra Virgin Olive Oil
- 2 tbsp OLiV Cask 18 Balsamic Vinegar
- Freshly ground black pepper to taste
- Salt, to taste
- Baguette or French bread or toasts
- Fresh basil for garnish (if desired)
Combine tomatoes, chopped garlic, red onion, Basil oil, Cask 18 Balsamic salt & pepper. Set aside.
Slice bread into thick slices. Spray lightly with oil or cooking spray. Toast under broiler.
Place toasted bread on plate and top with tomato mixture.
